- Colocamos en un bol, la espinaca picada y cocida, los vegetales rehogados, la ricotta, la nuez moscada y el tomillo, un poco de sal y mezclamos para que todo se integre.


- Tomamos un crepe, colocamos dos cucharadas del relleno y lo ponemos a 3 cm del borde doblamos los 3 cm hacia arriba y enrollamos.



- Acomodamos en una placa para horno, colocamos encima una salsa que nos guste y llevamos al horno fuerte 15 minutos, podemos colocar una crema de leche y queso por encima, un boloñesa, o bien una salsa de calabaza.
